1 cup of water
1 cup of vegetable stock
1/2 cup of rice
4 celery stalks
2 large carrots
1 small apple
2 handfuls of cashews
1/2 onion
tbsp of curry powder
Set 1 cup of water to a boil. Add rice and turn heat to low, cover.
Chop your carrots, onions, and celery. I prefer to do the carrots lengthwise.
Add vegetables to pot. After about 25 minutes, add the vegetable stock, apples, cashews, and curry powder.
Turn heat up to medium. Stir occasionally for 5 minutes. Soup should be ready. The rice might be a bit al dente. I like it that way, but if it's not soft enough for you just turn down the heat and cook until it is.
