Rainbow Salad #1
Cauliflower (a quarter of a head should do)
Yellow Pepper (1/2 a pepper)
Tomato (2)
Carrot (1 chopped edgewise)
Spinach (1/2 a bunch)
Purple Cabbage (1/4 of a head)
Rainbow Salad #2
Endive (1/2 a head)
Golden Raisins (3 handfuls)
Red Delicious Apple (1 apple)
Sweet Potato (1/2 a potato, spiralized or chopped into thin slices)
Lettuce (use generously)
Plum (2 plums)
Use whatever dressings you like. Both of these would work well with walnuts as well I think. My guess is this would serve 2-3 people.
